Red chile peppers are a major staple in New Mexico cuisine. At almost any restaurant and fast food joint you will be presented with the question, "Red or green?" That would be referring to which color of chile of course. Sometimes the spices in the sauce are spicy hot, sometimes it is mild. You can always ask for it on the side if you want to play it safe.
