SingleThread Farm is a Japanese-influenced restaurant and inn located in Healdsburg, California. Founded by chef Kyle and Katina Connaughton in 2016, it has quickly become one of the most highly acclaimed restaurants in the United States having received numerous accolades, including three Michelin stars, and it was named as one of the World's 50 Best as of 2021.
The restaurant is centered around a farm-to-table concept, with the farm providing the majority of the ingredients used in the kitchen. The SingleThread Farm is a 11-acre property that includes vegetable gardens, fruit orchards, and a greenhouse. The farm is also home to chickens, ducks, bees, and other animals, all of which contribute to the restaurant's menu in some way. The farm's focus is on growing rare and heirloom varietals of vegetables, fruits and herbs.
The restaurant offers a multi-course, fixed-price menu that changes daily, and it also offers a vegetarian tasting menu. The menu is focused on showcasing the seasonality of the local ingredients and the flavors of the farm. Some signature dishes include: Onsen egg, a slow-cooked egg, uni, abalone and sea urchin from the nearby coast.
The restaurant's atmosphere is elegant yet understated, with a focus on natural materials and neutral colors. The interior features a fireplace, a bar and a large open kitchen. The dining room has a view of the kitchen, which is a great opportunity for guests to see the chefs at work.
I visited SingleThread Farm in 2019 right after they earned their third Michelin star. This was my 2nd experience with a three Michelin-starred restaurant after The French Laundry and it didn't disappoint. The presentation and plating was world-class. Such creativity went into preparing this meal for us. It's pretty mind-blowing how the chefs come up with ideas like this.
